Red Lentils Latkes

Latkes!
They are fun, easy finger food and can defiantly be found under comfort food category.
Whether if the reason is reminiscent from home, holidays (who said Hanukkah) or just the fact you can't stop eating it.
In order to make sure it's not TOO much good, I added lentils. No, just kidding.
But to diversify, to add something good and different, and to enrich the tastes, I think this is something to be adopted.
Ingredients (about 30 latkes):
1/2 cup Red Lentils
2 big potatoes (or 3 smaller ones)
1/2 an onion
3 tablespoons flour
1 Tablespoon salt
1/2 teaspoon pepper
1/2 teaspoon minced garlic
1 egg
Oil for frying
Steps:
a) Boil the lentils with water until the lentils are soften
b) Peel the potatoes and grate into a large bowl. Make sure that to use the grater half and half with the smaller holes and the larger holes. squeeze the water out of the bowl
c) Grate the onion into the bowl (same way half and half use in the small and large holes of the grater)
d) Screen the water of the lentils and add the lentils to the main bowl
e) Add the egg, flour, salt & pepper
f) Heat a pan with the oil, create latkes shapes and fry both sides
OR bake on oven warmed in advance to 370°, 15 min to each side or until color is shown
Serve along Yogurt, Labane cheese, or my personal favorite sour cream with green onion
